Immerse yourself in the world of modern meat cuisine and discover techniques that take your dishes to the next level. At the Astra Lab, we show you step by step how innovative methods, refined flavours and precise preparation bring meat to perfection – tender, juicy and full of taste.
Together, we prepare varied dishes that blends tradition and modernity:
• Braised quail with wild herb jus
• Short ribs with sesame glaze
• Sous-vide beef fillet with hay béarnaise
• Herb chicken in a crust
• Beef tartare with ferments
To round things off, we enjoy the dishes we’ve created in a relaxed atmosphere – accompanied by a glass of wine that pairs beautifully. A flavoursome and inspiring late-morning experience of culinary perfection.
